Ingredients
  

  • 1 cup rolled oats
  • ½ cup pumpkin seeds raw or roasted
  • 2 tbsp ground espresso
  • ½ cup almond butter
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • Pinch of salt
  • Optional: 2 tbsp chia seeds ¼ cup dried cranberries

Instructions
 

  • Blend oats and pumpkin seeds in a processor until coarsely ground.
  • Add espresso, cinnamon, and salt. Pulse until mixed but not dust.
  • In a bowl, stir almond butter, maple syrup, and vanilla until smooth-ish.
  • Combine wet and dry mixes. Stir like your life depends on it.
  • Add optional chia and cranberries if you’re feeling spicy.
  • Press mixture into a lined pan with zero mercy.
  • Chill for 30 minutes, slice into bars, and store in the fridge.
