- ½ cup pumpkin seeds raw or roasted
- 2 tbsp ground espresso
- ½ cup almond butter
- ¼ cup maple syrup
- 1 tsp vanilla extract
- ½ tsp cinnamon
- Pinch of salt
- Optional: 2 tbsp chia seeds ¼ cup dried cranberries
Blend oats and pumpkin seeds in a processor until coarsely ground.
Add espresso, cinnamon, and salt. Pulse until mixed but not dust.
In a bowl, stir almond butter, maple syrup, and vanilla until smooth-ish.
