Equipment

  • 1 double boiler or a heatproof bowl and saucepan
  • 1 whisk or spatula
  • 1 Mixing bowl
  • 1 baking sheet
  • 1 small cookie scoop or spoon.

Ingredients
  

  • 8 oz dark chocolate, chopped
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 tbsp espresso powder

Instructions
 

  • In a double boiler or heatproof bowl, melt the chopped chocolate.
  • In a separate saucepan, heat the heavy cream and butter until just simmering.
  • Pour the cream mixture over the melted chocolate and whisk until smooth.
  • Add the espresso powder and whisk until well combined.
  • Allow the mixture to cool to room temperature, then refrigerate for 1 hour or until firm.
  • Use a small cookie scoop or spoon to form the mixture into balls and place them on a baking sheet lined with parchment paper.
  • Chill the truffles in the refrigerator for another 30 minutes.
  • Once the truffles are firm, roll them in cocoa powder to coat.
  • Store the truffles in an airtight container in the refrigerator until ready to serve.
