Preheat grill to medium-high heat.
Coat chicken breasts in olive oil, paprika, garlic powder, salt, and pepper.
Grill chicken for 6-7 minutes per side until fully cooked.
For the Coffee Caramel Flan
Preheat oven to 350°F (175°C).
In a saucepan, whisk together coconut milk, brewed coffee, maple syrup, cornstarch, and vanilla.
Heat over medium heat, whisking constantly until thickened.
Pour mixture into an oven-safe baking dish.
Bake for 25-30 minutes or until set.
Let flan cool before serving.
