Ingredients
  

For Iced Coffee:

  • 1 cup brewed coffee cooled
  • 1/2 cup milk or milk alternative
  • 1 tbsp sugar or sweetener
  • 1/4 tsp peppermint extract
  • Ice cubes

For Chocolate Mint Cookies:

  • 1 cup unsalted butter softened
  • 1/2 cup white sugar
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Cream butter and sugars together in a large bowl.
  • Add vanilla and peppermint extract, mixing well.
  • In a separate bowl, whisk flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry ingredients to the butter mixture.
  • Stir in chocolate chips.
  • Scoop dough onto a baking sheet and bake for 10-12 minutes.
  • For iced coffee: brew coffee, let it cool.
  • Fill a glass with ice and pour in the cooled coffee.
  • Add milk, sugar, and peppermint extract, then stir.
  • Serve the iced coffee with freshly baked cookies.
