Mocha Almond Energy Bars are a no-bake, plant-based snack loaded with espresso, almond crunch, and cocoa goodness for an energy-packed bite.

Ingredients
  

  • 1 cup rolled oats
  • ½ cup almonds chopped
  • 2 tbsp ground espresso
  • ¼ cup cocoa powder
  • ½ cup almond butter
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • ¼ cup water if needed

Instructions
 

  • Blend oats and almonds in a food processor until coarsely chopped.
  • Add espresso, cocoa powder, and a pinch of salt. Pulse until combined.
  • Stir in almond butter, maple syrup, and vanilla until smooth.
  • Add water if the mixture feels too dry.
  • Press into an 8x8 pan lined with parchment paper.
  • Chill in the fridge for at least 30 minutes to firm up.
  • Slice into 12 bars. Store in the fridge or enjoy right away.
