- 2 cans 15 oz each white beans, drained
- 1 can 15 oz corn kernels, drained
- 2 cups vegetable broth
- 1 cup unsweetened almond milk
- 1 pack vegan chicken strips
- Salt and pepper to taste
- 1 lime juiced
- Fresh cilantro for topping
For the Mocha Truffles:
- 1/2 cup vegan dark chocolate chips
- 1/4 cup coconut cream
- 2 tbsp brewed espresso
- 1/2 tsp vanilla extract
- Cocoa powder for rolling
For the Chili:
Heat olive oil in a soup pot over medium heat.
Sauté onion, garlic, and green chili until translucent and delicious-smelling, about 5 minutes.
Add cumin, smoked paprika, chili powder, and coriander; stir constantly for 1 minute.
Add beans, corn, broth, and almond milk; stir like you mean it.
