Ingredients
  

For the Chili:

  • 1 tbsp olive oil
  • 1 medium white onion chopped

  • 1/2 tsp coriander
  • 2 cans 15 oz each white beans, drained
  • 1 can 15 oz corn kernels, drained
  • 2 cups vegetable broth
  • 1 cup unsweetened almond milk
  • 1 pack vegan chicken strips
  • Salt and pepper to taste
  • 1 lime juiced
  • Fresh cilantro for topping

For the Mocha Truffles:

  • 1/2 cup vegan dark chocolate chips
  • 1/4 cup coconut cream
  • 2 tbsp brewed espresso
  • 1/2 tsp vanilla extract
  • Cocoa powder for rolling

Instructions
 

For the Chili:

  • Heat olive oil in a soup pot over medium heat.
  • Sauté onion, garlic, and green chili until translucent and delicious-smelling, about 5 minutes.
  • Add cumin, smoked paprika, chili powder, and coriander; stir constantly for 1 minute.
  • Add beans, corn, broth, and almond milk; stir like you mean it.
  • Toss in vegan chicken strips and simmer uncovered for about 30–35 minutes.
  • Season with salt, pepper, and squeeze that lime juice like you’re mad at it.
  • Garnish with fresh cilantro and a small air of superiority.

For the Mocha Truffles:

  • Melt dark chocolate and coconut cream together over a double boiler or microwave carefully.
  • Stir in brewed espresso and vanilla extract until smooth and scandalously glossy.
  • Refrigerate mixture for an hour until firm enough to scoop.
