Ingredients
  

Stuffed Mushrooms:

  • 16 button mushrooms stems removed
  • 1 tbsp olive oil
  • ½ small onion finely chopped
  • 2 garlic cloves minced
  • ½ cup breadcrumbs gluten-free if desired
  • ¼ cup vegan cream cheese
  • 2 tbsp nutritional yeast
  • 1 tbsp chopped parsley
  • Salt and black pepper to taste

Coffee Cake:

  • cups all-purpose flour
  • ½ cup brown sugar
  • 1 tbsp cinnamon
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¾ cup almond milk
  • ¼ cup melted coconut oil
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup for swirl

Instructions
 

Stuffed Mushrooms:

  • Preheat oven to 375°F (190°C).
  • Sauté onion and garlic in olive oil until golden and fragrant.
  • Add chopped mushroom stems, cook until softened.
  • Stir in breadcrumbs, vegan cream cheese, nutritional yeast, parsley, salt, and pepper.
  • Spoon mixture into mushroom caps and arrange on baking tray.
  • Bake for 25 minutes until tops are golden and fabulous.

Coffee Cake:

  • Preheat oven to 350°F (175°C).
  • Mix flour, brown sugar, cinnamon, baking powder, and salt in a bowl.
  • In another bowl, whisk almond milk, coconut oil, and vanilla.
  • Combine wet and dry ingredients until smooth.
  • Pour into greased muffin tin or cake pan.
  • Swirl in maple syrup for drama.
  • Bake 30 minutes. Cool, slice, devour.
