Ingredients
  

For the Sweet Potato Pie:

  • 2 cups mashed sweet potatoes
  • ¾ cup brown sugar
  • ½ cup heavy cream
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 1 unbaked pie crust

For the Coffee Whipped Cream:

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tbsp instant coffee or espresso powder
  • ½ tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C) and place the pie crust in a dish.
  • In a bowl, whisk together sweet potatoes, brown sugar, heavy cream, eggs, vanilla, cinnamon, nutmeg, and salt until smooth.
  • Pour the mixture into the pie crust and smooth out the top.
  • Bake for 45–50 minutes, until the center is set.
  • Let the pie cool completely before adding the coffee whipped cream.
  • For the whipped cream, whisk together heavy cream, powdered sugar, instant coffee, and vanilla until soft peaks form.
  • Spread or pipe the whipped cream over the cooled pie.
  • Slice, serve, and prepare to have your taste buds amazed.
