Ingredients
  

For White Chicken Chili:

  • 1 tbsp olive oil
  • 1 medium white onion diced
  • 3 cloves garlic minced
  • 2 cans 15 oz white beans, drained and rinsed
  • 1 package vegan chicken strips
  • 1 cup vegetable broth
  • 1 cup coconut milk
  • 1/2 tsp cumin powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili flakes
  • Juice of 1 fresh lime
  • Salt and pepper to taste

For Coffee-Chocolate Truffles:

  • 1/2 cup vegan dark chocolate chips
  • 3 tbsp brewed strong coffee
  • 2 tbsp coconut cream
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup cocoa powder for dusting

Instructions
 

White Chicken Chili:

  • Heat olive oil in a large pot over medium heat.
  • Sauté diced onion and minced garlic until sweet and slightly golden.
  • Stir in cumin, paprika, and chili flakes with the attitude of a woman who knows her worth.
  • Toss in the white beans, vegan chicken strips, vegetable broth, and coconut milk.
  • Simmer on low heat for 30 minutes while you sip wine.
