Brown Sugar Vanilla Iced Coffee

Brown sugar vanilla iced coffee tastes like a coffee-shop treat without the coffee-shop price tag. I stir caramel-like brown sugar with vanilla, pour it over chilled coffee and ice, then add creamy milk. My husband calls it dangerously smooth, my child wants whipped cream, and I call that excellent diplomacy.

Equipment

  • Mixing bowl
  • Small saucepan
  • Measuring cups
  • Measuring Spoons
  • whisk
  • coffee maker
  • Tall Glasses
  • Long Spoon
  • Ice Tray
  • refrigerator

Ingredients

Coffee Base

  • Strong brewed coffee — 2 cups (480 ml), cooled
  • Brown sugar — 3 tablespoons (38 g)
  • Vanilla extract — 1 teaspoon (5 ml)

Milk Base

  • Whole milk — 1 cup (240 ml), chilled
  • Ice cubes — 2 cups (280 g)

Optional Finishing

  • Whipped cream — 1/2 cup (60 g), optional
  • Ground cinnamon — 1/4 teaspoon (0.75 g), optional
  • Caramel sauce — 1 tablespoon (15 ml), optional

Instructions

  • Brew 2 cups of strong coffee and let it cool completely. For faster cooling, refrigerate the coffee for 20 to 30 minutes.
  • Combine brown sugar with 2 tablespoons of hot water in a small saucepan. Warm gently while stirring until the sugar dissolves into a smooth syrup.
  • Remove the syrup from the heat and stir in vanilla. Let it cool for several minutes so it does not warm the iced coffee.
  • Fill two tall glasses generously with ice. Use solid, fresh ice cubes for slower dilution and a colder drink.
  • Pour the cooled coffee evenly over the ice. Add the brown sugar vanilla syrup and stir gently until evenly combined.
  • Slowly pour the chilled milk into each glass. Stir lightly to create a smooth, creamy coffee mixture.
  • Top with whipped cream if desired. Add cinnamon or a small caramel drizzle for extra flavor and a café-style finish.
  • Serve immediately for the coldest, freshest texture. Use less ice for a creamier drink or extra ice for a sharper, more refreshing finish.
  • For a stronger coffee flavor, use cold brew or concentrated coffee. For a smoother drink, blend the coffee, syrup, and milk briefly before pouring over ice.

Notes

Dissolve the brown sugar before combining it with cold coffee because granulated sugar can settle and create a gritty texture. For a softer, creamier drink, use whole milk. Oat milk works well for a lighter variation. Customize with cinnamon, nutmeg, caramel, maple syrup, almond extract, or chocolate. Chill the coffee and syrup before assembly to reduce ice melting and dilution. Assemble immediately before serving for the best texture. Refrigerate leftover coffee and syrup separately in sealed containers for up to 3 days. Stir the syrup before using. Do not freeze the finished latte because dairy can separate and become grainy.
