fall matcha recipe

Fall matcha brings a cozy twist to my usual coffee routine. I whisk earthy green tea into buttery cookies, then watch my family investigate. My husband wants seconds immediately, while my picky kid suddenly becomes a food critic. Honestly, I’ll take the drama if everyone eats something green without complaining.

These fall matcha cookies combine earthy matcha, buttery dough, brown sugar, vanilla, and white chocolate for a cozy seasonal treat. They bake with crisp edges and soft centers, making them perfect beside tea or coffee. Adjust the matcha strength, freeze extra dough, and enjoy whenever snack time mysteriously arrives unexpectedly.

  • baking sheet
  • parchment paper
  • fine mesh sieve
  • Cookie Scoop
  • wire rack
  • Freezer
  • Freezer-Safe Tray
  • airtight container
  • oven

Ingredients

Matcha Cookie Dough

  • All-purpose flour — 1 3/4 cups (210 g)
  • Culinary-grade matcha powder — 2 tablespoons (10 g)
  • Baking soda — 1/2 teaspoon (2 g)
  • Salt — 1/2 teaspoon (3 g)
  • Unsalted butter, softened — 3/4 cup (170 g)
  • Brown sugar — 3/4 cup (150 g)
  • Granulated sugar — 1/4 cup (50 g)
  • Egg — 1 large (50 g)
  • Vanilla extract — 1 teaspoon (5 ml)
  • White chocolate chips — 1/2 cup (85 g)

Optional Finishing

  • Matcha powder — 1 teaspoon (2 g), for dusting
  • Flaky sea salt — 1/4 teaspoon (1 g), optional

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Sift flour, matcha powder, baking soda, and salt into a bowl. Sifting prevents matcha lumps and distributes the green tea flavor evenly.
  • Beat softened butter, brown sugar, and granulated sugar until creamy and fluffy. Add the egg and vanilla, then mix until smooth.
  • Gradually add the sifted dry ingredients to the butter mixture. Mix only until a soft dough forms to keep the cookies tender.
  • Fold in the white chocolate chips gently. Stop mixing once they spread evenly through the dough.
  • Scoop 18 portions onto the prepared baking sheet, leaving about 2 inches between each portion. Flatten each dough ball slightly.
  • Bake for 10 to 12 minutes, until the edges look set and lightly crisp while the centers remain soft.
  • Cool the cookies on the baking sheet for 5 minutes, then transfer them carefully to a wire rack. Their centers will firm as they cool.
  • Dust the cooled cookies lightly with matcha powder and add flaky sea salt if desired. Serve once completely cooled.
  • For make-ahead storage, freeze shaped dough portions on a tray until firm. Transfer them to an airtight freezer bag and bake directly from frozen.

Notes

For soft, chewy cookies, remove them when the centers still look slightly underbaked. Bake 1 to 2 minutes longer for crispier edges and a firmer texture. If the dough feels sticky, chill it for 20 to 30 minutes before scooping. Keep matcha protected from heat and light for the freshest flavor and color. Freeze shaped dough portions individually before transferring them to an airtight freezer bag for up to 2 months. Bake frozen portions with a few additional minutes. Store cooled cookies in an airtight container at room temperature for up to 5 days. Customize the flavor with extra matcha, white chocolate, pistachios, toasted coconut, almond extract, or a pinch of cardamom.
