Cookie Dough

  • 113 g Unsalted butter softened
  • 100 g Brown sugar packed
  • 50 g Granulated sugar fine

Ice Cream Filling

  • 500 g Vanilla ice cream slightly softened
  • 1 g Ground cinnamon optional

Instructions
 

  • Heat the oven to 175°C and line a baking sheet with parchment paper.
  • Beat softened butter, brown sugar, and granulated sugar until creamy and slightly fluffy.
  • Beat in the egg, vanilla, and espresso powder until the mixture looks smooth and evenly blended.
  • Whisk flour, baking soda, salt, cinnamon, and nutmeg separately. Gradually mix the dry ingredients into the wet mixture.
  • Fold in chocolate chips gently. The dough should feel soft but scoopable, not runny.
  • Scoop 18 portions onto the tray, leaving space between each. Bake for 10 to 12 minutes until edges set while centers remain soft.
  • Cool cookies on the tray for 5 minutes, then transfer them to a rack. For crispier cookies, bake 2 minutes longer.
  • Soften vanilla ice cream briefly, then mix in optional cinnamon. Scoop ice cream onto half the cooled cookies.
  • Top each portion with another cookie and gently press until the ice cream reaches the edges without squeezing out.
