Instructions
 

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Whisk flour, baking soda, salt, cinnamon, and nutmeg together until evenly combined.
  • Beat softened butter, brown sugar, and granulated sugar until creamy and fluffy. Add the egg and vanilla, then mix until smooth.
  • Stir the instant coffee powder into the wet mixture until fully incorporated. Add the dry ingredients gradually and mix just until a soft dough forms.
  • Fold in the chocolate chips gently. Stop mixing once the dough looks evenly combined to keep the cookies tender.
  • Use a cookie scoop to portion 18 dough balls onto the prepared sheet. Leave about 2 inches between each portion.
  • Flatten each dough ball slightly. Sprinkle lightly with cinnamon and optional flaky sea salt for extra autumn flavor.
  • Bake for 10 to 12 minutes, until the edges look lightly golden and crisp while the centers remain soft.
  • Cool the cookies on the baking sheet for 5 minutes. Transfer them carefully to a wire rack and let them finish cooling.

Notes

For soft, chewy cookies, avoid overbaking and remove them while the centers still look slightly underdone. Bake longer for crispier edges and a firmer center. Chill sticky dough for 20 to 30 minutes before scooping if needed. Freeze shaped dough portions on a tray, then transfer them to an airtight freezer bag for up to 2 months. Bake frozen portions with a few extra minutes. Store cooled cookies in an airtight container at room temperature for up to 5 days.
