Savory, protein-packed mini vegan quiches made with tofu and veggies, served with a fluffy, spiced coffee cake for the ultimate brunch combo.
Ingredients
Mini Vegan Quiches:
- 1 block 14 oz firm tofu, drained
- ¼ cup unsweetened almond milk
- 2 tbsp nutritional yeast
- ½ tsp turmeric
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp olive oil
- 1 cup spinach chopped
- ½ cup red bell pepper diced
- ½ cup onion finely chopped
- Salt and pepper to taste
Vegan Coffee Cake:
- 1½ cups all-purpose flour
- ½ cup brown sugar
- 1 tbsp cinnamon
- 1 tbsp baking powder
- ¼ tsp salt
- ¾ cup almond milk
- ¼ cup melted coconut oil
- 1 tsp vanilla extract
- 2 tbsp maple syrup for swirl
Instructions
Mini Quiches:
- Preheat oven to 375°F (190°C).
- Grease mini muffin tin lightly with olive oil.
- In a blender, combine tofu, almond milk, nutritional yeast, turmeric, garlic, onion powder, salt, and pepper.
- Blend until smooth and creamy.
- In a pan, sauté onions, bell pepper, and spinach for 5 minutes.
- Mix sautéed veggies into tofu mixture.
- Spoon into muffin tin cups evenly.
- Bake for 25 minutes, until firm and lightly golden.
- Let cool slightly before serving.
Coffee Cake:
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, sugar, cinnamon, baking powder, and salt.
- In another bowl, whisk almond milk, coconut oil, and vanilla.
- Combine wet and dry ingredients.
- Pour into greased loaf pan.
- Swirl in maple syrup like the drama queen you are.
- Bake for 30 minutes or until toothpick comes out clean.
- Cool before slicing.
