Mocha Cashew Energy Bars
These Mocha Cashew Energy Bars combine the energizing power of coffee with the rich, buttery taste of cashews.
Ingredients
- 1 cup cashews
- 1/2 cup dates pitted
- 2 tbsp ground coffee
- 1 tbsp cacao powder
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- Pinch of sea salt
- 2 tbsp coconut oil
- 1-2 tbsp water as needed
Instructions
- Process the cashews in a food processor until they’re finely chopped.
- Add dates, coffee, cacao, maple syrup, vanilla, and salt. Blend until combined.
- Slowly add coconut oil and blend until smooth.
- If the mixture is too dry, add water, one tablespoon at a time.
