Coffee and ginger combine in these tasty, energizing bars. A zing of spice and a jolt of caffeine!

Ingredients
  

  • 1 cup oats
  • 1/2 cup dates pitted
  • 2 tbsp ground coffee
  • 1 tbsp ground ginger
  • 2 tbsp almond butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 2 tbsp coconut oil
  • 1-2 tbsp water if needed

Instructions
 

  • Blend oats, dates, coffee, ginger, and salt in a food processor.
  • Add almond butter, maple syrup, and coconut oil. Blend until smooth.
  • Add water, a tablespoon at a time, to adjust the consistency.
  • Press the mixture into a parchment-lined 8×8 pan.
  • Refrigerate for 20-30 minutes.
  • Slice into bars and enjoy your spicy, caffeinated snack!
