
Coffee Ginger Energy Bars
Coffee and ginger combine in these tasty, energizing bars. A zing of spice and a jolt of caffeine!
Ingredients
- 1 cup oats
- 1/2 cup dates pitted
- 2 tbsp ground coffee
- 1 tbsp ground ginger
- 2 tbsp almond butter
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 2 tbsp coconut oil
- 1-2 tbsp water if needed
Instructions
- Blend oats, dates, coffee, ginger, and salt in a food processor.
- Add almond butter, maple syrup, and coconut oil. Blend until smooth.
- Add water, a tablespoon at a time, to adjust the consistency.
- Press the mixture into a parchment-lined 8×8 pan.
- Refrigerate for 20-30 minutes.
- Slice into bars and enjoy your spicy, caffeinated snack!
